Vegetarian Chili Recipe

I usually double this recipe, even for just the 3 of us, so we can have leftovers
    diced med. onion
    diced green bell pepper
    2 cans diced tomatoes with juice
    1 can pinto beans (or whatever kind of beans you like), drained
    1 can kidney beans (or whatever kind of beans you like), drained (I've done 2 cans of pinto or 1 can kidney & 1 chili beans. Or if you don't like beans you can add another can tomatoes and a can of corn)
    2 cups water
    2 Tbsp chili powder
    1 Tbsp dry oregano
    1 tsp salt
    1 tsp pepper
    1 cup uncook rice


Saute onions & bell pepper. Then add rest of ingredients, bring to a boil, then lower heat & simmer about 40-45 mins.

Serve with your favorite "chili fixins" like shredded cheese, sour cream etc.
