Black Bean Tortilla Casserole Recipes

1 onion chopped
1 green pepper chopped
14.5 oz. can diced tomatoes
3/4 cup picante sauce
1 clove garlic, minced
1 tsp. cumin (ground)
2-15 oz. cans black beans
8 corn tortillas
2 cups shredded cheese (either Mexican blend or Cheddar)

Toppings:
shredded lettuce
chopped tomatoes
green onions
sliced olives
sour cream

In large saucepan, combine the onions, peppers, tomatoes, picante sauce, garlic and cumin. Bring to a boil. Reduce heat and simmer for about 10 minutes. Stir in beans.

Coat the bottom of a 9" x 12" baking dish with non-stick cooking spray. Spread about 1/3 of mixture in bottom of dish. Layer with 4 tortillas and 2/3 cup cheese. Repeat all of the layers and top with remaining beans.

Cover with foil and bake at 350 degrees for 30 - 35 minutes. Sprinkle with remaining cheese and let stand until cheese melts on top.

Serve with toppings.
